Ground beef and onion soup mix meatballs in a sauce of cranberries, chilli sauce and sauerkraut served over rice

Entree: Red Beans and Rice with Andouille Sausage
(celebrate Mardi Gras! Red beans with ham, we also add andouille sausage, onion, celery, bell pepper, garlic, parsley, bay leaf, Worcestershire sauce and hot sauce over white rice)

Soup: Asparagus Soup with Lemon and Parmesan
This is a lovely creamy soup that has no cream in it. It has slow cooked asparagus, veggie stock, lemon juice and some Parmesan and herbs.

Entree: Rum Glazed Pork Tenderloin
This glaze is so good it could make a shoe taste awesome!! The tenderloin is rubbed with spices and marinated over night, seared on stove top then roasted with the glaze. To finish the glaze and pan drippings become a fabulous sauce. Served with cilantro, pineapple,lime rice.

Tasty moist grilled chicken thighs seasoned with garlic, lime juice, cumin, coriander oregano, soy sauce and a bit of honey. Served with Peruvian green sauce and roasted veggies. So delish. Chicken thighs! Where have they been all your life??
