Entree: Beef and Broccoli Stir Fry
Thinly sliced sirloin, soy sauce, ginger, garlic, cornstarch, onions, water chestnuts, broccoli served over rice. All of the usual suspects come together beautifully.

Soup: Roasted Eggplant (v)
(roasted fresh eggplant pureed with fresh basil, garlic, onion, tomatoes and Parmesan cheese...serve hot or cold)

Entree: Tarragon Mustard Beef
Beef steak rubbed with pepper, roasted, sliced...topped with a sauce of mushrooms, green onions, beef stock, yogurt and The Prairie Gypsies Tarragon Mustard...served with mashed potatoes.

Soup: Beau's Hardy Broccoli (v)
(fresh hearty broccoli, carrots, celery, onion, garlic, vegetable broth, milk and creamy cheese)

Entree: Ranch Meatloaf
Certified Natural Beef and Pork from the Rowdy Stickhorse Wild Acres mixed with bacon, onion, cheddar cheese, egg, jalapeno, Worcestershire sauce, salt, pepper, cilantro, oregano served with Hasselback potatoes(baked thinly sliced crisp baked potatoes slathered in olive oil, chives, butter, salt and pepper. these are soooo good)

Soup: Roasted Poblano Potato (v)
(roasted poblano peppers simmered with potatoes, Southwest spices, milk and cream cheese)

Entree: Creamy Beef Enchilada
(a flour tortilla filled with ground beef, onion, green chilies, cumin, cheddar cheese and mozzarella cheese baked in cream, topped with more cheese, served with black bean chili rice, and sour cream)
