Entree: Orange Chicken
(one of our "old" favorites...sliced baked boneless chicken breast with a light sauce of orange juice, stock, butter, ginger and pepper...served over rice)

Entree: Creole Chicken Cakes
("cakes" of chicken breast meat, bread crumbs, egg, mayo, onion, bell pepper, served with a Creole mustard sauce and steamed veggies)

(a big favorite! Ground beef, Monterey Jack cheese, Cheddar Cheese, onion, cottage cheese, tomato sauce, green chilies, black olives, chili powder, egg, salt, sugar, corn tortillas, layered and baked)
