This is a wonderful dish of zucchini, corn, roasted poblano, onions, and fresh herbs with a cream sauce and mozzarella cheese. Such a tasty vegetarian dish.

Entree: Eggplant Parmesan (v)
(eggplant dipped in egg, bread crumbs, parmesan cheese, fried in vegetable oil then layered with pasta sauce, mozzarella and more parmesan cheese, pasta)
