Gypsy Cheesy Bread
(serves 8)


  • 1 loaf of French bread

  • 1/2 -3/4 cup The Prairie Gypsies' Parmesan Gypsy vinaigrette (shake well)

  • 2 T. capers, chopped fine (optional)

  • 2 T. sun-dried tomatoes, chopped fine (optional)

  • 3 c. shredded mozzarella cheese or 1 lb. fresh, sliced


Preheat the oven to broil.

Sliced away the crust from the top and the sides of the bread. In one-inch intervals and not cutting all the way through the bread, cut the bread into slices. Stuff cheese into each slot and place bread on a long strip of heavy duty foil. Make a sort of "cradle for the bread with the foil but do not cover the top. Place on a baking sheet and set aside.

Mix together the vinaigrette, capers, and tomatoes. Using a pastry brush, brush entire mixture over the top and sides of the cheese-stuffed bread (like icing a cake!). Place in oven and broil until brown and bubbly, making sure all of the cheese has melted. Yummy!
