Honey Mustard Chicken


  • 6 boneless, skinless chicken breasts

  • 1 cup mayonnaise

  • 1-2 T. honey

  • 2 T. The Prairie Gypsies Apricot Mustard

  • 1 T. milk

  • 3-4 cups bread crumbs

  • 1/4 cup melted butter

  • 1 1/2 cups cream


In a medium bowl, combine mayonnaise, honey, milk, and The Prairie Gypsies Apricot Mustard. Dredge each chicken breast in the mustard mixture (reserve the excess, you'll need it for the sauce), then in bread crumbs. Place on baking sheet and drizzle with melted butter. Bake @ 350 degrees for 20-30 minutes, or to internal temperature of 165 degrees.

Place the remaining mustard mixture in a sauce pan. Stir in cream, heat to boiling. Lower temperature and continue to cook until thickened. Serve over baked chicken with rice and/or steamed vegetables.!
