Roasted Vegetables
(serves 6)


  • 1 cup zucchini, sliced into rounds or half rounds

  • 1 cup yellow squash, sliced into rounds or half rounds

  • 1 cup broccoli medium florets

  • 1 cup asparagus, cut into 1 inch segments

  • 1 cup cauliflower medium florets

  • 1/2 cup The Prairie Gypsies' Parmesan Gypsy (shake well before measuring)


Combine all ingredients in a bowl, tossing until the vegetables are coated. Pour vegetables onto a baking sheet. Roast in a 400 degree oven until just tender, approximately 10-15 minutes. Place on a serving platter. Serve hot or at room temperature.
