Marinated Tomato Caper Salad
(serves 4 as a side dish)


  • 2 c. chopped Roma tomatoes

  • 1 T. capers, drained

  • 1 T. red onion, chopped

  • 6 fresh basil leaves or 1 t. dried

  • 1/2 c. The Parmesan Gypsy vinaigrette

  • 1 1/2 c. fresh spinach or mixed greens

  • 1/2 c. feta cheese, crumbled


Combine tomatoes, capers, onion, basil and vinaigrette. Chill and marinate at least one hour. Serve over spinach and top with feta cheese.
